SUCCESS!!

YAY! For the first time since they've been here the girls ate all the food that I made!!! Thank you Trader Joes for yummy curry sauce and I have mastered a cabbage dish that they like! The cool thing about it is that WE ALL liked it! Even Gracie.... Yes, it is still Indian food, but it is easy and at least I know I can do that quickly!

  1. Yay! So glad you have found some dishes that the girls like--even better that you all liked them. We love Indian food around here, so let me pass along one of my favorite EASY dishes:

    1) start your basmati rice cooking (can get in bulk at whole foods or in a big bag at costco).

    2) choose you your Trader Joe's sauce! (each sauce tastes best with certain veggies/combinations--but of course this is just my opinion) I'll tell you some of our favorites, but they are all vegetarian, as we are, so you can add the meat as you see fit.

    Just saute some onion in olive oil in a large skillet, and then add whatever vegetables you want to add in the order of how long they take to cook. So this means if i am using carrot, that goes into the pot next, and it sautes a little while I am chopping the potato, for example. So, when your veggies are almost done, toss in the sauce and then let it all simmer for at least 10 min. Spoon over the rice and serve!

    --Punjab sauce (I think that's the name)--has spinach in it. Excellent with potato and chickpeas, can add carrot if you like. When sauce is ready to serve, top with lots of fresh cut tomato, and let it get warmed before dishing out. Yum!

    --Masala sauce. Excellent with chickpeas, carrots, green beans, tofu and I imagine chicken. Add some frozen peas in at the end, and when they are warm, they are ready! When all cooked and ready to serve, you can also add some chopped fresh cilantro--divine! (although I usually do the cilantro when NOT doing the peas, and use the peas if I don't have cilantro)

    --when doing the curry sauce sometime, try okra with your chicken, and top with the dresh cilantro or fresh sliced green onion.

    --you might also try the Thai green curry sauce. Not the greatest as it, in my opnion, but yummy in the following combination I came up with, which your girls might like:

    saute onion in olive oil, add sliced red pepper and chopped carrot and saute till almost done. Add green curry sauce and 1 lb. firm tofu, cut into cubes, and pea pods. (Can also add water chestnut and/or baby corns.) When all is cooked, serve over jasmine rice preferrably (but brown is great too) and you MUST try it topped with the fresh chopped cilantro AND some of the Thai chili-lime cashews, chopped. Oh. My. : )


    **to each of these sauces you can add a little water to thin them out and make them stretch farther. just add it when you add the sauce and it will still taste great. To stretch the masala or curry sauce, you can also add one can of diced tomatoes or tomato sauce.
